Every dessert list needs one that isn't chocolate or brown sugar, and this is it. Lemon and blueberry is a bright, tart combination that works after a heavy meal in a way molten chocolate cake really doesn't.

It's built like a cobbler: fruit on the bottom, batter poured over, no stirring. The batter rises and bakes into a soft cake layer while the berries collapse into something jammy underneath.

Frozen blueberries are genuinely fine here — better, in some ways, since they hold their shape. Just don't thaw them first or they'll bleed purple through the whole batter.

Before anything goes in the pot

    Whisk the batter in a bowl, not in the crock

    Lumps mixed in the pot stay lumps. A bowl and a whisk take one minute and the difference is visible in the finished cake.

    Put the blueberries in the crock pot and spread them flat.

    Frozen straight from the bag — don't thaw them or they bleed.

Right before you serve

Finishing touches

Take the lid off for the last 15 minutes.

This sets the top and gives it some colour.

Let it stand 10 minutes, then spoon into bowls.

Stirring

Do not stir once the lid is on

Cakes, cobblers and puddings set in layers. Stirring collapses the separation between the cake and the sauce underneath, and you end up with one uniform wet layer instead of two good ones.

Swaps and add-ins

Add fresh lemon zest to the batter.

One lemon's worth. It amplifies the lemon peel in the packet.

Use mixed berries.

Blackberries and raspberries work the same way.

Add a splash of lemon juice over the fruit.

Two tablespoons before the batter goes on.

Serve with lemon whipped cream.

Tips for success

  • Don't thaw frozen berries. Thawed berries release purple juice that bleeds through the batter and turns the whole thing grey-purple.
  • Paper towel under the lid. Berries steam heavily and it will drip straight onto your topping.
  • Fresh zest at the end is the best change you can make. The packet has lemon peel for depth; fresh zest adds aroma that cooking destroys.
  • Drop in a liner before anything else. Smooth it against the sides and fold the edges over the rim. When you're done, lift it out and throw it away — the crock never needs scrubbing.
