A molten or pudding cake is a small piece of kitchen magic. You pour batter in, pour hot water over the top, and refuse to stir. Two hours later the batter has risen through the water and baked into cake, and the water has fallen through the batter and turned into hot fudge sauce underneath.

It works because of density. The sugar and cocoa in the water are heavier than the batter, so they sink while the flour and leavening rise. Stir it and you destroy the separation — you'll get one uniform, slightly soggy cake instead of two distinct layers.

There's a gram of instant espresso in the packet. You won't taste coffee. You'll just notice the chocolate tastes more like chocolate.

Before anything goes in the pot

    Whisk the batter in a bowl, not in the crock

    Lumps mixed in the pot stay lumps. A bowl and a whisk take one minute and the difference is visible in the finished cake.

These happen outside the crock pot, before it's switched on.

    Grease the crock pot well or drop in a liner.

    This batter sticks. Skipping this step means scrubbing.

    Whisk the packet, eggs, milk and melted butter together until smooth.

    In a separate bowl, not the crock. Lumps here become lumps in the cake.

    Pour the batter into the crock pot and spread it flat.

    An even layer bakes evenly.

    Pour the hot water gently over the top and do not stir.

    This is the whole trick. The water sinks and becomes fudge sauce while the batter rises and becomes cake.

Right before you serve

Finishing touches

Turn the crock pot off and let it stand 15 minutes with the lid off.

The center firms up as it rests. It will look underdone at first.

Spoon from the pot, scooping sauce from the bottom over each serving.

Dig to the bottom. That's where the fudge is.

Stirring

Do not stir once the lid is on

Cakes, cobblers and puddings set in layers. Stirring collapses the separation between the cake and the sauce underneath, and you end up with one uniform wet layer instead of two good ones.

Swaps and add-ins

Add chocolate chips.

Half a cup scattered over the batter before the water goes on.

Make it mocha.

Use hot brewed coffee instead of hot water.

Add a pinch of cayenne.

Mexican chocolate style. A quarter teaspoon in the batter.

Add peanut butter.

Three tablespoons dolloped on the batter before the water.

Tips for success

  • Do not stir after the water goes on. This is the one instruction that decides whether the recipe works. Stirring destroys the layers.
  • Paper towel under the lid. Condensation drips onto the cake and makes the top soggy. A paper towel catches it.
  • Underdone in the center is correct. The soft middle is the sauce, not raw batter. Pull it when the edges are set.
  • Drop in a liner before anything else. Smooth it against the sides and fold the edges over the rim. When you're done, lift it out and throw it away — the crock never needs scrubbing.

Finish it right

Vanilla ice cream, while it's still hot.

Hot cake and cold ice cream is the entire reason this dessert exists. Do not serve it plain.

A pinch of flaky salt.

On chocolate, salt is not optional — it makes the chocolate taste more like itself.

Fresh raspberries.

Tart fruit against dark chocolate. It cuts the sweetness.
